Bigfoot

Sierra Nevada

Chico, CA

First introduced in the winter of 1983, Bigfoot is a cult-classic brewed in the barleywine style—strong and robust with the refined intensity of a wine.

This beer has a simple grain bill comprised of Caramlized malts, and two-row pale malt. They then use , Cascade, Centennial, Chinook hops and ferment with an ale yeast. It is a simple recipe but it produces great flavor.

This is one that you could age and it would develope new flavors but why wait. This is a must try if you like malty strong beers with a touch of old style hops.

TexHex Bruja's Brew IPA

Spoetzl Brewery
Shiner, TX

The label and ingredient of cactus was grabed my attention. This has just released and is new for 2022.

"A mythical IPA brewed with cactus water & featuring Amarillo hops"

A light hazy beer color with nice foam. It smelled of tangerine, pineapple, citrus and doesn't change the way they taste which this has something different and some really nice bitterness. I dont' taste the cactus water but then cactus water really does not have much taste to it. Yes you can get water from cactus!

It's easy drinking and nice flavors with that bitterness laying on the tongue just right.

This is a refreshing beer which lends itself to su.mmer time drinking.

Where the Wild Hops Are

Dogfish Brewing

Milton, DE

This is one to try. It is part of Dogfish's  Off-Centered Art Series and it is, well unusual.

This unfiltered, rustic IPA is brewed with four wild-derived hop varieties that include Zappa, Amarillo, Comet and Sabro. It’s then blended with a touch of barrel-aged wild ale that’s been aged for four years in French Oak barrels.

The result is well worth the journey. It has a great smell, with a grapefruit taste. The wild ale flavor is there but very suttle.

So why not take a chance and go wild!

Back Pew Brewing Co

Porter, TX

I am a big fan of Imperial or Double IPA's so I had to give this one a try.

This is an interesting West Coast Double IPA. Very little noise or smell. Great color and clearity. I am not a fan of the hops flavor which I later found out why. This beer uses Chinook which I love but then they use CTZ and Simcoe of which I am not a big fan but the hop profile is done right, just not to my pallet.

Over all this is a beer to try if you like Double IPA's.

Bohemian Pils

Ingenious Brewing Co

Humble, TX

Lets start with the label. I love the colors and foil lettering. Great job.

From there it gets confusing. It states that it is Old World lagered pilsner. This is a lot of words since all true pilsners are lagered.

The recipe is Floor malted Pilsner, single decoction mash and 100% Czech saaz hops. Decoction is an old technique used to brew beer for centuries. A decoction mash is a step mash that is performed by removing a portion of the mash, boiling it and returning it to the main mash. Traditionally, decoction mashing was used to get the most out of malt that was not produced to today's levels of modification.

This is not a traditional pils but then Ingenious is not a normal brewery. The pride themsleves on brewing "Ales for the open-minded"! Additionally "they specialize in small batch constantly changing brews."

I appload their use of chez Saaz but they have taken it to the upper limit bringing in a Pilsner at 35 IBU's.

Overall it is not a bad beer but no where near what I would call a pilsner. Worth trying.
